This holiday season my son designated the responsibility of Christmas eve dinner and dessert to me. Normally someone else in the family does all the cooking but this year he wanted his Momma to do it all. Gluten-Free Allergy Friendly Rice Gravy & Biscuits Recipe

greycakeBeing from and living in Kentucky means that gravy and biscuits is a staple breakfast food. I grew up eating it and my 6 year old son LOVES this breakfast meal. However, since he has eosinophilic esophagitis (a rare food allergy disorder that I’ve discussed multiple times here and  on my other blog) he isn’t able to eat like most kids. In response to that we came up with a recipe that is gluten-free, wheat-free, dairy-free, egg-free, soy-free, nut-free and almost meat-free! Yes, it was a challenge but he loves this recipe! Quick Kid-Friendly Recipe: Hot Dog Weiner Surprise

eatingdessertOne day last week I was  in a time crunch and needed to come up with a quick lunch for my two boys. So I created the hot dog surprise! If you have some left over hot dog wieners this is a great way to create an easy and super quick kid-friendly lunch. I was a little hesitant at first about this new recipe but my kids liked it and has asked for it again.
