Lentil Loaf: Cheap Veggie “MeatLoaf” Recipe
Recently I’ve been trying out different types of recipes on my family. Our youngest son is allergic to many foods so I wanted to try out a vegetarian meal for him. After looking at various recipes, I decided upon a variation of a veggie meatloaf I had read about elsewhere on the web. I decided on using lentils ( a type of beans) for my “loaf”. This recipe ended up being tasty and very cheap to make! The only drawback is getting the kids used to the different meatless texture.
Ingredients Needed For My Meatless Lentil Loaf Recipe:
1 cup of dried lentils
1/4 cup chopped garlic croutons
12 crushed saltine crackers
1 egg
1/4 white or red onion
ketchup
Recipe Directions:
Add 1 cup of dried lentils to 3 cups of boiling water. Let the lentils cook for 2 hours or until all the water is absorbed and the lentils are easily mash-able. Then mash the lentils up like you would potatoes.
Next, stir in the remaining ingredients - egg, crushed crackers, onions, and croutons. Shape this mixture into a meatloaf form. Then add ketchup all over the top.
Put the Lentil Loaf in the oven for 30 minutes at 325 degrees.
Let cool then slice into traditional meatloaf slices or squares.
Pair this with roasted garlic mashed potatoes, green beans, or corn and you have a complete inexpensive meal!
